Nous le faisons dorer profond\u00e9ment et soigneusement. Nous aimons aussi caram\u00e9liser. Et tandis que les oignons et autres alliums retiennent le plus l&rsquo;attention en mati\u00e8re de brunissement et de caram\u00e9lisation, j&rsquo;aimerais attirer votre attention sur un autre aliment transform\u00e9 par le pouvoir du brunissement et de la caram\u00e9lisation non enzymatiques : l&rsquo;humble citron.<\/p>\n<p>En tant que t\u00eate acide, les citrons sont importants pour moi. Outre les applications acidul\u00e9es \u00e9videntes comme la limonade, les vinaigrettes et le th\u00e9, presque tous les aliments sal\u00e9s sont am\u00e9lior\u00e9s avec un filet de jus de citron frais. Mais la saveur du citron frais n\u2019est pas ce dont nous parlons aujourd\u2019hui. Les citrons caram\u00e9lis\u00e9s ne sont pas frais, mais ils sont d\u00e9licieux.<\/p>\n<div class=\"eloquent-imagery-image\">\n<div class=\"flex justify-center\">\n<img decoding=\"async\" class=\"border border-gray-100\" src=\"https:\/\/vieassociative.be\/actualites\/wp-content\/uploads\/2024\/10\/Carameliser-un-citron-immediatement.jpg\" alt=\"Image de pirate de la vie\" width=\"2000\" height=\"1124\" loading=\"lazy\"  >\n<\/div>\n<\/div>\n<p>Po\u00ealer un citron dans de l&rsquo;huile d&rsquo;olive concentre ses saveurs existantes tout en en cr\u00e9ant de nouvelles. La pulpe fond et l&rsquo;eau s&rsquo;\u00e9vapore, laissant derri\u00e8re elle des sucres caram\u00e9lis\u00e9s, des \u00e9corces ramollies et de jolis petits morceaux dor\u00e9s. Manger un peu de citron caram\u00e9lis\u00e9 est une exp\u00e9rience intense. C&rsquo;est toujours assez acidul\u00e9 et l\u00e9g\u00e8rement amer, mais ancr\u00e9 dans de petits moments de douceur torr\u00e9fi\u00e9e, presque caramel.<\/p>\n<p>Les citrons caram\u00e9lis\u00e9s peuvent \u00eatre utilis\u00e9s aussi bien dans des applications sucr\u00e9es que sal\u00e9es. Carolina Gelen les utilise pour faire une vinaigrette au citron caram\u00e9lis\u00e9, mais je les saupoudre sur toutes sortes de choses avec un abandon sauvage. Jusqu&rsquo;\u00e0 pr\u00e9sent, mes pr\u00e9f\u00e9r\u00e9s sont le yaourt grec avec beaucoup de miel (il a le go\u00fbt d&rsquo;une garniture raffin\u00e9e pour tarte au citron), chaque plat de riz et les bols de p\u00e2tes cr\u00e9meuses. Je pense qu&rsquo;ils seraient \u00e9galement incroyables dans une trempette \u00e0 base de yaourt ou m\u00e9lang\u00e9s \u00e0 n&rsquo;importe quel l\u00e9gume r\u00f4ti. \u00c9tant donn\u00e9 que les citrons caram\u00e9lis\u00e9s sont si intenses en eux-m\u00eames, ils fonctionnent mieux lorsqu&rsquo;ils sont associ\u00e9s \u00e0 du sucre, du gras ou des deux. Utilisez-les comme accent pour les riches et sucr\u00e9s ou les riches et sal\u00e9s, et soyez pr\u00eat \u00e0 tomber amoureux.<\/p>\n<div class=\"eloquent-imagery-image\">\n<div class=\"flex justify-center\">\n<img decoding=\"async\" class=\"border border-gray-100\" src=\"https:\/\/vieassociative.be\/actualites\/wp-content\/uploads\/2024\/10\/1728598781_565_Carameliser-un-citron-immediatement.jpg\" alt=\"Image de pirate de la vie\" width=\"2000\" height=\"1125\" loading=\"lazy\"  >\n<\/div>\n<\/div>\n<h2 id=\"caramelized-lemons\">Citrons caram\u00e9lis\u00e9s<\/h2>\n<h2>Ingr\u00e9dients:<\/h2>\n<ul>\n<li>\n<p>Citrons, coup\u00e9s en rondelles de 1\/8 de pouce, \u00e9p\u00e9pin\u00e9s<\/p>\n<\/li>\n<li>\n<p>Huile d&rsquo;olive<\/p>\n<\/li>\n<\/ul>\n<p>Ajoutez suffisamment d\u2019huile dans une grande sauteuse ou une po\u00eale pour couvrir juste le fond. (N&rsquo;utilisez pas de fonte car la fonte ne s&rsquo;entend pas avec l&rsquo;acide.) R\u00e9glez le feu \u00e0 moyen-doux. Ajouter les tranches de citron en une seule couche et cuire, en les retournant si n\u00e9cessaire, jusqu&rsquo;\u00e0 ce que toute la pulpe soit d\u00e9sint\u00e9gr\u00e9e et que les tranches soient bien dor\u00e9es des deux c\u00f4t\u00e9s. Plus ils sont bruns, moins ils seront acidul\u00e9s.<\/p>\n<p>Transf\u00e9rez-les sur une planche \u00e0 d\u00e9couper et coupez-les en petits morceaux. Mettez les petits morceaux <em>sur<\/em> choses, et mettez-les <em>dans<\/em> des choses. Je recommande de commencer avec un yaourt entier et beaucoup de miel.
